Overnight oats are an amazing option for breakfast. In fact we've written a whole blog about them! They are easy to prepare and are a really healthy option for breakfast. They are also really versatile and can be changed depending on what is in season at the time.
Speaking of which. Carrots are in season in April. So we thought we would incorporate carrots in to our recipe for this month. We had a think and a search and we can up with this amazing recipe for overnight oats with a carrot cake twist! What better way to start your day than with a cake inspired breakfast.
So grab your large glass jar of choice. We've chosen our 450ml mason mug for this recipe. And follow along below to create your next tasty breakfast.
Ingredients
60g rolled oats
120ml almond milk
Half a carrot, grated
Half a banana, mashed
½ teaspoon vanilla extract
Pinch of salt
1 tbsp hemp seeds
1/2 tsp cinnamon
Pinch of freshly grated ginger
Pinch of nutmeg
1bsp chopped walnuts
1bsp raisins
Equipment
Chopping board and knife
Grater
1 x 450ml Mason Mug
Method
Combine your oats, milk, vanilla, banana, hemp seeds and spices in your mason mug. Give them a stir and even a shake to mike them up.
Mix in the grated carrot, chopped walnuts and raisins.
Put the lid on and leave in the fridge overnight.
To serve remove the lid and sprinkle with some additional walnuts, carrots and raisins.
Overnight oats are great aren't they! So many possibilities with a simple base. We love this simple and tasty recipe as it helps us keep going on those tough days in the warehouse. The energy released from the oats over time helps us to keep going until lunch!
