How do you like your peanut butter? Chunky or smooth?
I absolutely love peanut butter. It's one of my go to snacks. I eat it in so many forms. On toast, with an apple, with strawberry jam on a rice cracker. Or just a big spoonful when I'm feeling lazy.
In this edition of our healthy recipe series we are going to make our own peanut butter. It's surprisingly easy and very healthy. Peanuts are a great snacking option as they are high in vitamin E, magnesium, manganese, phosphorus, copper and the B vitamins thiamin, folate, and niacin. They are also a source of B6, iron, pantothenic acid, potassium and zinc. So basically they are full of great stuff!
Ingredients
400g raw organic paleskin peanuts
2 tsp sea salt
2-3 tsp peanut oil
Method
Before you start cooking ensure you have plenty of jars for storing this delicious spread. We recommend either our 277ml Tall jar or the 190ml Round jar. Again how do you like your peanut butter? I like mine chunky but in case you like it smooth we have included two versions of this recipe to appease everyone.
The Chunky Version
Heat your oven to 200C/180C fan/gas 6.
Tip your raw peanuts onto a large baking tray and place in the oven and roast for 10 minutes. If you have purchased roasted nuts simply skip this step!
Stir the nuts occasionally to enure they don't burn and they are roasted evenly. When they are golden brown remove them from the oven and allow to cool slightly.
Once cooled but still slightly warm tip the nuts into a food processor or blender and blend for about a minute.
Remove half of the nuts and put to one side. These will be the chunks in your chunky peanut butter!
Add the salt to the nuts still in the blender and blend for another 4-5 mins or until the nut butter is a smooth consistency that you are happy with.
Add a drizzle of oil, add the chunks and blend briefly.
Spoon your peanut butter in to glass jars and enjoy.
The Smooth Version
Heat your oven to 200C/180C fan/gas 6.

Jars up your mixture and enjoy!
This recipe should last up to 2-4 weeks in the fridge.
Variations
This is a pretty simple recipe and only contains 3 easy ingredients. But this doesn't mean you can't spice it up and make it your own. Below are some ideas we've come up with. Why not make this yourself and let us know how you make it your own in the comments below.
Try adding some chilli flakes to make a spicy peanut butter.
Add a spoonful of marmite while blending. It sounds weird but it's very tasty.
When canning your peanut butter why not add some strawberry jam so you have a jar ready for your PB&J sandwiches.
Squeeze in some honey or maple syrup to make your peanut butter a little sweeter.
Mix in chocolate chips or raisins to add some sweet chunks to your chunky peanut butter.
Substitute the peanuts with any other nut to create your favourite nut butter.
