This weeks recipe is a short and simple one. And comes from Stuart's extensive knowledge from his days as a professional chef.
Summer is the perfect time for hanging out with friends and having a few BBQs in the sun. And what goes better with a BBQ than a classic Caesar salad. In this weeks recipe we teach you how to make Stuart's amazing Caesar salad dressing. Perfect for storing in one of our beautiful glass bottles. Like our 250ml sauce bottle.
Grab all the equipment and ingredients below and follow along with this simple recipe. It's the perfect summer salad dressing to impress your friends. Or even to use everyday for lunch or dinner.
Stuart's Caesar Salad Dressing Recipe
Equipment
Mixing bowl
Blender
Knife and chopping board
Funnel
Ingredients
2 tbsp White wine vinegar
2 tbsp Olive oil
4 tbsp Vegetable Oil
1 clove of garlic
Handful of Parsley
1 tbsp Mayonnaise
2 Chopped Anchovies
20g Blue cheese
Method
Make sure you have a clean bottle and you sterilise it thoroughly. We have a handy blog on sterilising if you need some tips!
Crush your garlic and lightly chop your parsley.
Chop up your anchovies and blue cheese and put in your mixing bowl.
Add the rest of your ingredients in to your mixing bowl and mix thoroughly.
Alternatively you can add all your ingredients to a blender and blend for a smoother dressing.
This salad dressing should be kept in the fridge once bottled and should last up to 2-3 days. For a longer lasting dressing remove the anchovies and add them just before serving.
The Perfect Caesar Salad
Ingredients
1 small Coz lettuce
50g Parmesan cheese, in shavings
5 fresh Anchovies
100g bread (for croutons)
Fresh rosemary, thyme and garlic for the Croutons
Butter for cooking
160g Oven baked chicken
Method
Preheat your oven to 180ºC.
Place a few Coz lettuce leaves around the edge of your chosen serving bowl.
Chop the rest of the lettuce in to small 1 inch pieces and put in a mixing bowl.
Dice the bread in to small chunks and place in an oven tray with a few nobs of butter, some fresh rosemary, thyme and garlic and Cook in the oven for about 10 minutes or until golden. Stirring every 2 minutes.
Add the parmesan, anchovies, croutons and chicken to the mixing bowl and stir.
Drizzle over your freshly made Caesar salad dressing and mix again.
Serve and enjoy!
