In this recipe we teach you how to make a super simple tomato sauce. Perfect for pastas, pizzas, stews and more. Endlessly customisable and versatile. This is the perfect sauce to make in batches to freeze and use later.
It's tomato season in the UK. From delicious cherry tomatoes all the way up to giant beef tomatoes. We are currently swimming in cherry tomatoes. Eating them for breakfast, lunch and dinner. But what do you do with any that you simply can't eat fresh?
This recipe will work for any size or style of tomato. In fact you might get some interesting and unique flavours by trying different tomatoes and even combining them. Always use them fresh. Just make sure they are washed and clean before using them.
So get out in the garden or allotment and pick some of your freshly grown tomatoes and turn them in to a delicious pasta sauce. Ready for your next dinner. Or even to store for later in the year.
That's the perfect thing about having a base sauce like this. You can make loads and use it later. To store this sauce we recommend using one of our 277ml glass jars. It holds the perfect amount of sauce for 2-3 people.
You can also freeze the sauce within one of the jars. Just don't fill the sauce right to the top to allow for the sauce expanding when frozen.
Ingredients
1 tbsp olive oil
1 onion, chopped
2 garlic cloves, crushed
1 tbsp tomato purée
800g chopped tomatoes
1 tsp dried oregano
Equipment
Large saucepan
Chopping board and sharp knife
Wooden spoon
277ml Tall Jar freshly sterilised using one of the methods in our handy blog.
Method
Chop your chosen tomatoes in to small chunks.
Cook the onions on a low heat until soft and add the garlic and tomato puree.
Add the chopped tomatoes along with all the juice from the chopping board.
Stir in oregano and add salt and pepper.
Simmer for 20 minutes, stirring occasionally.
Allow to cool and store in sterilised jars. This will last up to 5 days in the fridge or 3 months in the freezer.
Customise
This is a fantastic base sauce. So you can add to it depending on what dish you want to create. Below are some ideas to help add to the flavour.
Dried chilli flakes or fresh chillis for a spicier sauce.
Add a few chopped olives.
To create a Bolognese sauce add basil, bay leaves and a little red wine.
Or to create an Arrabbiata sauce add 1tsp cumin powder, 1tsp ground coriander, fresh/dried chillies to taste, 4 tbsp black olives, red,yellow and green peppers and a handful of fresh coriander just before serving.
